Easy, fast and oh so easy dinner menu! For those days when you are strapped for time, this meal is the perfect one! Both parts of this refreshing duo are one bowl preps. So grab two large bowls and mix!

Three cheeses are the stars in these meatballs. You can’t go wrong with cheese! And there’s lots of it in here. Parmesan gives tartness, Roquefort lend a punch, and Gruyere will ooze inside these babies.

I don’t know what it is about pairing cheesy goodness with tangy flavors. They compliment each other, elevating the strong flavors of the cheeses. And wait until you bite into one of those red peppercorns. Pop!

These are perfect meatballs for pasta too! Make yourself a marinara sauce, a garlicky bechamel and dump these meatballs in there right after baking. Or by all means, keep it simple and eat them on their own, dip them in mustard or an aioli sauce. Tons of possibilities! Plus, you can choose ground lamb or ground chicken instead of beef. Enjoy!!

Three Cheese Meatballs

Easy, fast and oh so cheesy meatballs! Pair with a tangy coleslaw for a quick and healthy low carb meal!

Ingredients

Three Cheese Meatballs
  • 500 grams Ground Beef*
  • 1/3 cup Grated Parmesan Cheese
  • 1/3 cup Grated Gruyere Cheese
  • 1/3 cup Crumbled Roquefort Cheese
  • 3/4 cup Panko Bread Crumbs
  • 1/4 cup Olive Oil
  • 1/2 Onion, chopped
  • 1 Tbsp Minced Garlic
  • 1 Large Egg
  • 2 tsps Salt
  • 1 tsp Ground Pepper
  • 1 Tbsp Chopped Fresh Parsley
Tangy Coleslaw
  • 3 cups Julienned Red Cabbage
  • 1 cup Julienned Carrots
  • 1 cup Julienned Cucumber
  • 1/2 cup Lemon Juice
  • 1/4 cup Olive Oil
  • 2 Tbsp Apple Cider Vinegar
  • Salt and Pepper to taste
  • 1 Tbsp peppercorns

Instructions

Three Cheese Meatballs
  1. Preheat oven to 200 C / 400 F
  2. In a large bowl, mix all the ingredients together until all come together. 
  3. Shape mixture into small balls (about the size of ping pong balls), placing them on a greased baking sheet.
  4. Place baking sheet in the oven, on the middle rack. Bake for 12 minutes.
  5. Remove tray from the oven and let them sit for 5 minutes before serving.
  6. Meanwhile, prepare the tangy coleslaw.
  7. To serve, place meatballs over the slaw and sprinkle extra parmesan cheese. 
  8. Enjoy!
Tangy Coleslaw
  1. In a large bowl, mix cabbage, carrots and cucumber.
  2. Add olive oil, lemon, vinegar, salt and pepper. Toss to combine evenly.
  3. Sprinkle red peppercorns on top to serve. 

Notes:

Ground Beef can be swapped for your choice of meat. Though other meats may need more cooking time. Chicken and lamb would need 15-17 minutes to cook completely through.
