Sure, simple basmati does do the trick when pairing with curries. But wait until you try this version! You will want to eat it all!

Indian Cashew Rice

Indian Cashew Rice

Infused with the gorgeous aromas of Garam Masala spice mix and roasted cashews, this rice is the perfect side dish for any Indian inspired curry.

Ingredients

  • 1/4 cup olive oil
  • 1 cup Cashews, raw and whole
  • 2 cups Basmati rice, thoroughly rinsed and drained
  • 1 Tbsp Garam masala spice mix
  • 1 tsp Salt
  • 4 cups Water, boiling
  • 1 Tbsp Butter

Instructions

  1. In a medium sauce pan, heat the olive oil over medium high heat
  2. Add the cashews and sauté for a few minutes, stirring constantly to brown on all sides
  3. Add the Garam masala and the rinsed and drain basmati rice to pan. Stir the rice with the cashews for one minute
  4. Add the boiling water, salt and butter. Give it a quick stir
  5. Cover the pot and set the heat to low
  6. Cook for 15 minutes covered
  7. When the time is up, turn off the heat but don't remove the lid for at least 5 minutes
  8. Now remove the lid and fluff the rice with a fork
  9. It is ready to serve!
