Rainbow Quinoa Pilaf
I love the nutty depth of rainbow quinoa. Even though regular quinoa is just as good in this recipe, the beautiful combo of rainbow quinoa grains is spectacular.
And it’s not only because it’s healthy. Quinoa is such a cool side dish to add to your menus. It is so versatile! Served warm, cold or as a salad topping… I just love biting into those mini grains of sunshine!
Rainbow Quinoa Pilaf

This is a gorgeous side for any protein. It is especially flattering for fish or shellfish. The lime at the end makes its ingredients pop in your mouth!

- 1 Tbsp olive oil
- 1 cup button mushrooms, sliced
- 1/2 cup corn
- 1 tsp garlic, minced
- 2 tsps shallots, chopped
- 1 cup rainbow quinoa*
- 2 cups boiling water
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- salt and pepper to taste
- 2 Tbsps butter
- 1/4 cup fresh basil
- 1 Tbsp fresh oregano
- Lime to taste
- * regular quinoa works just as well

- In a sauce pan, sauté in olive oil the mushrooms and corn until both are slightly brown
- Add garlic and shallots. Stir until the shallots are translucent
- Mix in the quinoa and boiling water
- Season with the smoked paprika, turmeric, salt and pepper
- Lower the heat to low and cover the pot. Cook for 15 minutes
- Turn off the heat and add the butter. Stir until the butter melts and is incorporated
- Serve warm with a generous squeeze of lime and topped with oregano and basil.
