Whole Wheat Crumpets

An easy morning start calls for easy baking... well, not really baking, but, nonetheless, chewy gorgeous bread. Right out of the ... err... pan? Yep! These are easy to make Whole Wheat Crumpets. The most gorgeous meet me in the middle, let's compromise, mix between pancakes and English muffins. These freeze beautifully and you can thaw and toast them any time! Yummm!

It's as easy as making pancake batter... easier really. Less ingredients, one bowl, one spoon.

You will need crumpet or egg rings for this. Be sure to oil the inside of the ring too. Look at those beautiful bubbles!

Brown them to your liking! Freeze them and pop them in your toaster any time!

Whole Wheat Crumpets

An easy and fun twist to baking bread!

Makes: 10 Crumpets

Ingredients:
  • 1 1/3 cup warm water
  • 1 Tbsp sugar
  • 1 Tbsp instant yeast (1 sachet)
  •  
  • 3/4 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tsp salt
 

Instructions:
  1. In a medium bowl mix the warm water with the sugar and the instant yeast. Let this mixture sit for 5 minutes. Yeast should froth
  2. Add the flours and the salt. Mix well to create a thick batter. Let the batter sit for 30 minutes before using.
  3. Heat non-stick pan to medium low. Add 1 Tbsp olive oil to pan. Brush the inside of the egg rings as well. Place rings on the pan, making sure they lay completely flat on the pan.
  4. Pour about 2 heaping Tbsps of the batter onto each ring. Do this slowly as to not let any batter seep through the bottom of the rings.
  5. Let the crumpets cook just as you would pancakes. Let the top of each crumpet get bubbly. Wait for the first of these bubbles to pop before turning over. Once most of the batter is set on top, it’s time to flip over. Run a knife or spatula around between the crumpet and the ring and push the crumpet out. Then flip them over, without the use of the ring. Cook for about 30 seconds more.
  6. Transfer crumpets onto a wire rack… Serve warm… open them up and have fun melting butter into those beautiful nooks and crannies!
