Quick and Easy Cinnamon Babka

I like to feed people. It's my thing. And I loooooove brunch. Seriously one of my favorite ways to feed and bring people together. Can't go wrong with brunch. You can actually get away with serving any food at brunch time. But let's be real, there's nothing like sweets. Nothing will bring people back to your table like sweet bread. 

This is Babka, an easy and quick version of it, at least. Soft and chewy sweet bread, filled with warm cinnamon heaven!Cut a slice and grab a hot cup of coffee and enjoy all the smiling faces looking back at you around the table.... sweet!

Quick & Easy Cinnamon Babka

Sweet bread that will make you a star!

Makes: 2 loaves

Ingredients:
  • FOR THE DOUGH
  • 1 1/3 cup warm water
  • 1/2 cup honey
  • 2 Tbsps instant yeast (2 sachets)
  • 1/4 cup vegetable oil
  • 1/4 cup melted butter
  • 1 beaten egg
  • 3 1/2 cup all purpose flour
  • 1/2 tsp salt
  • FOR THE FILLING
  • 1 cup softened butter
  • 2/3 cup brown sugar
  • 4 Tbsps cinnamon
 

Instructions:
  1. Preheat your oven to 400F / 200C and butter two bread loaf pans
  2. In a large bowl mix all the ingredients for the dough, first with a wooden spoon and then by hand. Keep mixing until it all comes together and the dough pulls away from the bowl
  3. Turn dough onto a floured surface and knead a couple of minutes until the dough becomes smooth and pliable. Add bits of flour if it’s too sticky
  4. Let the dough rest on the counter for 5 minutes. This will allow the gluten strands to relax, making it easier to shape
  5. Cut the dough into two equal pieces. Roll out one of the pieces into a 12 by 18 inch rectangle (approximately, don’t take out the ruler. Eyeball it!)
  6. Spread 1/2 cup softened butter over the entire triangle. Then sprinkle with 1/3 brown sugar and 2 tbsps cinnamon. Try to make this as even as possible so you don’t end up with bits of bread with no flavor.
  7. Roll the dough, starting on one of the long sides of the rectangle to create a log
  8. Here comes the fun part! Join both ends of the log, hold them in place, and now spin the loop side to twist the log onto itself a couple of times.
  9. With a sharp knife, split this coil down the middle, from the joined ends to the loop. Turn both halves up, exposing the many layers of sweet goodness.
  10. Holding it all together (both halves held together with the layers exposed), transfer to one of the prepared loaf pans. If your coil is too long, just bring it all together and tuck it all in. It can look messy now, but once it bakes it will be awesome!
  11. Repeat the whole process with the second piece of dough. Mix it up a bit! I substituted the cinnamon on the second babka with chocolate chips, you can also use dark chocolate shavings, mix nuts and raisins with the cinnamon. Options are endless!
  12. Dot each loaf with pea size bits of butter and sprinkle with extra sugar. Bake for 15-18 minutes or until tops are brown
