  • 4 lbs pork shoulder
  • 1/3 cup minced garlic
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp ground mustard
  • 1/2 cup lemon juice
  • 3 cups orange juice
  • 1 tsp brown sugar
  • 1 medium onion, cut into thin wedges
  • 1/2 red pepper, cut into slices
  • 1/2 yellow pepper, cut into slices
  • Corn tortillas, tangy slaw, jalapeño slices for serving

How to cook Cuban Style Pulled Pork

Instructions
  1. Cut the pork shoulder into about 6 pieces. 
  2. Place pork in a large bowl.
  3. Add garlic, paprika, cumin, oregano, mustard, brown sugar, lemon and orange juice. 
  4. Mix everything well and marinate for 1 hour in the refrigerator
  5. Cook with the marinade, either in a slow cooker on low for 8 hours
  6. Remove meat from juices, let it cool down. 
  7. Pull beef apart with fork. 
  8. In a large pan reduce juices over medium high heat until it is half the volume.
  9. Add the pulled pork, plus the onion wedges and pepper slices
  10. Heat through until onion starts to wilt. 
  11. Serve over corn tortillas, topped with tangy cole slaw and jalapeño slices
