Oat Tortillas
We are living in a time with so much access to nutrition information. And this has alerted us of benefits of leaning our meals towards healthy alternatives. May it be for weight loss, heart health or conditions which need our attention to what we put in our bodies.
For years we have heard how oats, taken daily, can bring substantial benefits to our health. They have been promoted as a great addition to our breakfasts. Any way you see it, oats are good for you!
So when I came to the discovery of this recipe, I was blown away. I first saw this as an Indian style Roti, where they added herbs and spices to the dough to eat with curries and chutneys. I simplified the recipe, taking away all the extra flavors so I could use this tortilla in place of corn tortillas. The result is the most amazing, soft tortilla! And the flavor you say? Well, I first served this to my husband and kids without telling them they were not eating corn. They could not tell the difference! Seriously good tortillas.
You can store these babies in the refrigerator, wrapped in a towel, for up to a week. Reheat them on a nonstick pan over medium heat for a few seconds per side.
*Quick notes:
Make sure the water is boiling when you add it to the oats flour. It will start the cooking process and allow you to create a dough.
When you mix the ingredients it will not look much like a workable dough. Just let it sit to cool completely. The boiling water is doing its thing and once the oats absorb the moisture your dough will be perfect!
When you flip the tortilla the last time, if it doesn't puff up, lightly tap it with a folded towel. This chars the bottom layer a bit and forces steam in between the layers.
Oat Tortillas
Ingredients
- 1 Cup Oat flour (you can make your own by grinding oats in a food processor, 1 cup rolled oats will yield 1 cup of oat flour)
- 1 Tbsp olive oil
- 1/4 tsp salt
- 1 Cup boiling water
Instructions
- In a medium bowl mix oat flour and salt.
- Add olive oil and boiling water. Make sure the water is boiling, if it's warm the dough will not reach the consistency you need.
- Stir everything well until combined. Let the dough sit until completely cool. This will allow the dough to thicken.
- Knead the dough until it becomes smooth. It will be slightly sticky, that's ok.
- Cut into 8 pieces and roll each into a ball
- Press a ball between two pieces of plastic, using a cutting board to help press down. Press as thin as you like, this dough holds beautifully!
- Cook each disc of dough on a nonstick pan over medium heat, about 30 seconds on first side. Flip over and cook 30 seconds. Flip once more and wait for the tortilla to inflate. It's done!
- Repeat with the rest of the dough balls.
- Now enjoy these beautiful and healthy tortillas with whatever you want to layer on them!
