Sometimes life becomes such a routine. And when you live so many miles away from home, that routine is even more overwhelming. Those moments, when everything around you seems so alien and you need something that reminds you, that connects you to memories of home… that’s when a recipe like this comes in handy.

This is what time travel looks and tastes like. Butternut squash in velvety syrup brings me back to my childhood home, sitting with my mom in the kitchen. It’s one of those sweet treats that warms your heart.

Butternut Squash in Syrup

Butternut squash immersed in sweet, cinnamon infused, syrup. Perfect for a warm-your-heart treat!

ingredients:

  • 1 large butternut squash
  • 1 1/2 cup dark brown raw cane sugar
  • 4 cinnamon sticks
  • water, enough to cover squash in pot

instructions:

  1. Cut the ends of the butternut squash, then cut the squash in half lengthwise
  2. Cut the squash into medium pieces. DO NOT peel the squash!
  3. Place pieces in a large saucepan or medium pot. Fill with enough water to cover the pieces of squash.
  4. Add the cane sugar and the cinnamon. Bring to a boil over high heat
  5. Lower heat to medium and simmer until the liquid reduces into a runny dark syrup. Try not to stir halfway through! Cooked squash is very tender and the pieces may fall apart. 
  6. Serve cold or warm with a good drizzle of its syrup. Eat as is or pair with your favorite ice cream ;)
